iPhone SDK Development from Pragmatic Programmers. I haven’t yet read the book, but these guys put out quality work. I expect it to be excellent.

iPhone Developers Cookbook. I’ve been picking and choosing recipes from this book and it is excellent.

Code

Redacted is an open source app from Craig Hockenberry. It’ll show you a little about interfacing with url schemes, posting to twitter, typing in a text view, and substituting strings. It’s good stuff.

Apps Amuck. These guys are putting up one app per day, each showing off a different piece of iPhone functionality. Have a look and see if there’s any knowledge you can pull for your app.

Tutorial Blogs

iCode is now totally legit. They’ve got a great set of tutorials that’ll teach you a lot about iPhone development.

Cocoa Touch Tutorial from Matt Long at Cocoa is My Girlfriend. These guys really know Cocoa and the tutorial is a great “first start” to iPhone development.
